Miso-roasted French beans and cherry tomatoes

This quick and easy recipe for miso-roasted French beans with cherry tomatoes is simple to make but packed with umami flavour. It makes a perfect festive season side-dish!
Ingredients
  • 300g French beans, trimmed
  • about 12 cherry tomatoes, halved
  • 1 Tbsp sunflower oil
  • 1 Tbsp white miso paste
  • 1 Tbsp rice wine vinegar
  • 1 tsp mirin
  • 1 tsp soy sauce (use tamari if you need it to be gluten-free)
Instructions
  1. Pre-heat the oven to 200C.  Whisk the oil, miso paste, vinegar, mirin and soy sauce together to make a smooth sauce.
  2. Place the beans in a large bowl, add two thirds of the dressing and toss to coat well.  Turn the beans out onto a shallow ovenproof dish in a single layer and roast for about 15 minutes.
  3. Place the tomatoes and the rest of the dressing into the same large bowl and toss to coat.  Scatter them over the beans in the oven, and use a heat-proof spatula to stir the vegetables together and distribute them evenly.
  4. Roast for another 10 minutes or until the tomatoes start to collapse, then remove from the oven and serve immediately.
